Recipe For The Road!

Sweet Potato Muffins! Easy to handle snack or breakfast for life on the road.

3 eggs
1 1/2 c. sugar
1 (16 oz) can sweet potatoes, drained and mashed
1 c. oil
2 tsp. vanilla
2 1/4 c. flour
1 1/2 tsp. each: Baking powder Baking soda Cinnamon
1 tsp. salt
1/4 tsp. each: Ground cloves Ginger Nutmeg

In a large bowl combine eggs, sugar, potatoes, oil and vanilla. Mix well by hand or with mixer. Mix dry ingredients and add to sweet potato mixture. Beat only enough to blend. Pour into 2 greased and floured 8x4 inch pans or 48 mini muffin cups. Bake loaves 50-60 minutes at 350 degrees, muffins 20-25 minutes. Freezes well. Yield 2 loaves or 48 mini muffins.
